Mexican Food Win/Mexican Food Fail

Okay so I’m going to warn you now that there aren’t any recipes in this post.  I’m not even going to try and pretend that I remember with any sort of accuracy how these two recipes went down (hey I get points for honesty right?) but I found these pictures and thought they deserved at least a little mention for inspiration especially since, at least where I am, we’re starting off the weekend with a little bit of a cool spurt. That’s right I’m sitting here, in Southern California, at the end of May, wearing my new teal crochet beanie and actually not really looking a tad bit ridiculous… it’s positively nippy today! (Crafty sidenote… I have to think of fun names for stuff I’m going to put in my store… this teal’s really sassy so I’m thinking the “Vegan Vixen” beanie….  other fun names?  Velociraptor Ball Beanie?)

First, off a Mexican Food Win!

gravy flautasWhat you see before you is just your simple run of the mill veggie flautas but I topped it with a cheezy hollaindaise type sauce.  You know like a noochy gravy with onions and mushrooms and what not.  And then we made some fresh salsa to go on top of that.  Blasphemy?  Maybe.  I’m not sure if I’ve ever seen a Mexican taco dish that incorporates gravy but I’ll tell you it was delicious!  It tastes like another blasphemous vaguely Mexican combo Rotel and Velveeta.

rotelHas anyone ever had this before??  I never had but Mr. Guava’s family used to make it all the time.  I have to be honest I was a little freaked out the first time I saw Mr. Guava dumping the contents of this odd little can over cubed Velveeta before popping the whole thing in the micro but you know what it was good.  Weird… overly processed… artery clogging… extremely artificial… but good.  Anyway, that’s what this was like… but fresher and without so many scary mystery ingredients.

I guess you just never know when genius is going to hit.  For example, I thought this next dish was going to be a win for sure!  It wasn’t.  It was a FAIL.  What happened was I saw this masterful piece of black bean wizardry on SDCat’s blog… YUM!  I thought… I must have it!  I even went so far as to pilfer around the internet and find the recipe… then I went home, recipe in hand, and proceeded to make my own version… bah… fail…

blackbeansoupMy oven baked tortilla strips were actually delicious and spicy as was my guacamole.  And in defense of my soup the noodles were only bloated because Mr. Guava had an extremely late night at work.  Unfortunately, the tofu sour cream was suspect and the noodles soaked up what was tasty broth and made everything sort of bland but it was pretty and as I look at SDCat’s delicious version again I might have to give this another go.  Any tips for tofu sour cream??  I’d love to be able to make my own (tofutti’s delicious but expensive and I have to make a special trip out to Mother’s which is the only place near me that sells it)??  Oh well, I’ll look for some inspiration this weekend.

Sweet & Sour Mango Balls

So remember my Salty Balls post???  Come on guys it happened like 5 minutes ago and was pretty epic if I do say so myself.  Okay one reminder but I have to say I’m kind of disappointed in all of you…

velociraptor[Flash of Recognition]  Good now that we’re all on the same page on to my Sweet and Sour Balls!!!  That’s right I actually thought of a good idea and followed through with the idea before losing interest!  Mild Attention Deficit my– ooh isn’t that an awesome picture of a Velociraptor?  I couldn’t decide between that one and this one of it looking all sweet before heading into rabid attack mode…

sweet and sourMmm…. Doesn’t it look delicious???  It was!  And I have another big pile of it in the fridge for lunch!! [Tummy Growls like Velociraptor!]  I just used my Mas o Menos Salty Ball “recipe” but made a much larger batch.  They didn’t firm up quite the same (that’s what happens when you make something amazing but don’t write any of the measurements down… or measure) but I baked and froze the extras so I’ll let you know if those end up keeping their shape better when I pull them out.  I also always notice that the texture of my neat is often a lot better when I pull it out of the microwave as leftovers… weird huh… ahh the wonders of cooking in the microwave.  Anyways, I paired this with some lightly seasoned and lightly stirfried veggies and tofu.  I wanted everything to be mild and crisp since I was adding a thick sauce.

sauceYes, I strategically set my Orla Kiely water cup there so you could see what a pretty color my Mango Sauce was [sheepish look]…

Here’s what went in the food processor…

Sweet & Sour Mango Sauce

1 Large Clove of Garlic or 2 Small Cloves

1 Ripe Mango Chopped

2 Squirts of Ketchup

1 Tablespoon of Molasses

1 Tablespoon of Brown Sugar

1 Small Squirt of Sriracha

Generous Sprinkling of Dried Hot Peppers

Light Sprinkle of Garlic Salt

Tablespoon or so of Soy Sauce

Mix and pour in Rice Vinegar until a thick syrupy consistency is reached!

You could probably cook your stir fry in this but I always feel like sweet and sour sauce is always a little bit of an overload so we decided to just dollop it on top.  Depending on how quick you’re serving everything and how hot your stir fry is you may want to warm the sauce a bit if you choose to do it this way.  Everything was steaming so it was fine at room temperature for us.

WIP Wednesday: Home Edition

wipbannerGah…  is it Wednesday again already??? That extra long weekend can really kick you in the blogging butt no?  Ergh… I know I know… where are the food pics Guava baby??? No, like pics of food you actually cooked???  [Insert Guilty Face Here] Pesky camera!  I always tell it to follow me into the kitchen and document my measureless madness but it’s always sitting on the couch or twiddling it’s little camera toes and whatnot.  Bah.  It’s just been so much easier to document my crafts as they’re still around for more than 20 minutes after I finish them!

In fact I really have been enjoying the heck out of my crafts lately as they’ve been home crafts!  Usually, I’m always working on some gift or another (and there are currently a couple in the works) but I’ve made some time to get the new pad set up.  Here’s my little Guava Dream Cottage (a constant Work in Progress)!

flowersI know I know… you can’t eat em but I just couldn’t resist a little floofiness in those adorable little wooden boxes!  Hopefully, I’ll get some time to work on my fence this weekend.  A little surprise coming there… it will either be awesome or a humongous disaster!

On the inside I continue forth with my horrible not very sustainable Orla Kiely obsession.  I’ve been slowly but steadily using all those extra dish towel sets (each set comes with a printed towel and coordinating solid color towel with matching same color design) and tablecloths to outfit the rest of the cottage.  Here are my couch pillows…

Couch Pillows=Half of printed dishtowel and solid dishtowel filled with stuffing. 2 pillows per 2 dishtowel set.

My bath mats… freshly used and awaiting a possible matching shower curtain…

Orange Bathmat= Solid Color Dishtowel sewn onto the front of a pre-made floor mat. Embellished with extra material from it's printed counterpart.

Brown Bathmat= Printed Dishtowel sewn onto bathmat. Both dishtowels needed to be slightly trimmed. I took around a 4 inch strip off the short end.

And for the bedroom some pillow cases…

To go with my pillow cases I made a throw by sewing a tablecloth onto one of these fleece blankets.  You could of course just buy fleece from the fabric store but I got these on sale and by the time I factored in the fact that they were nearly the same size and shape I decided to make my life as easy as possible.

throwIt’s completely adorable all made up and I’m working on an alternate set in the pear print that you see in the couch pillow picture.  You’d think after a wedding I’d be done with home furnishings but that just wouldn’t be us.  We’re not really fine china Egyptian cotton people.  I’m sure people wondered why I didn’t have a comforter set on my registry but asked for 8 sets of 3 different dishtowels!  Heehe… at any rate the Orla Kiely Target set is just perfect for our new little house.  Bright, cheery, and with a vintage vibe!  We had started out looking at dish sets in the antique stores down town but I don’t really have anywhere to store/display them right now and I’d be too deathly afraid to actually use and enjoy them.

At any rate that was the majority of the Work in Progress we did over our long weekend.  I wanted to get them done as we had everyone over on Saturday for Mr. Guava’s graduation party (also took the fam out to an amazing Vegan restaurant… next time we go we’ll make sure to get pictures!) and our house is so small everything kind of needs to be open.  That’s right Mr. Guava is now a Doctor of Physical Therapy!  Woot Woot!  Just this last clinical this summer to go and I’ll have to start convincing him to leave it for our Vegan Family Owned Cafe.. or I’ll have to tack on my sandwich bar to his Wellness Center… or … hehee… getting ahead of myself again… per the usual… [contented sigh] we’ll just enjoy the relaxation of our lives evening out for the time being.  And we are remembering to enjoy it!

Salty Balls

Mwahaha…. I don’t care how innapropro that sounds it just cracks me up to no end.  And besides from giving me a healthy chortle to release much needed endorphins to get me through the work day they are also mighty tasty!  That’s right I said it “Guava Hearts Salty Balls!”  Oh… now how did “Tofu” slip out of the title…slippery little scamp…

Tofu Balls!  These were seriously the best balls I had in a good long while (okay gutterbrains… that was a serious comment).  They were easy, tasty, and firmed up pretty well (seriously dirty birds… what kind of blog do you think I’m running here?).  I started out with the recipe from…

large_la_dolce_vegan… but of course didn’t stick to it completely or take any measurements… “DOH!”  The Guavas shall have to lay themselves down in sacrifice once again stuffing themselves with dinner after dinner of tofu balls to perfect the recipe for you all.  Gah, we’re selfless… and humble!  If you’d like to give it a go around (I think Balls in general are hodge podge recipes more than a science) here’s how I think it went down… give it a go…

Tasty Tofu Balls

**Disclaimer… add “mas o menos” to each measurement**

Sauteed up a small chopped onion (with part of stem… you could substitute green onion in here), and a cup of frozen burger crumbles.  Seasoned with lemon pepper, garlic salt, and lawry’s.

While this was a cooking threw half a block of drained extra firm tofu, handful of fresh basil, 4 cloves of garlic, generous sprinkle of nooch and flour, lemon pepper, garlic salt, cumin, and splash of soy sauce into the food processor  and blended with olive oil until pasty but not pourable.

Put this in a bowl with cooked burger crumbles and onion mixing in a leftover bag of frozen bread crumbs (p.s. whenever you buy or make a big loaf and have that testy butt of bread around are your counter getting hard… toast that sucker up, food processor it, add some spices and throw in the fridge for a rainy/tofuball day).  At the last minute decide what would really kick it up a notch is some Bacon Bits (oddly vegan) look over shoulder to make sure no one’s watching this odd addition, sprinkle wildly and chortle secretly.

Form into balls roll in flour and freeze.

I let these hang out it the freezer for around an hour or so until I got the call from Mr. Guava that he was on his way home and fry those suckers up in some olive oil.

Enjoy Salty Balls.

To serve with this high class culinary masterpiece I made the Baked Lentils and Brown Rice Casserole also from La Dolce Vegan

All I had for the top was some American Cheez but you know what it was weirdly tasty.  I did think it could have used a little salt.  Maybe my broth was just light?  Maybe no one should listen to me because my blood pressure’s probably higher than all you gorgeous healthy vegans?  Eh.. it was actually perfect as a companion to my Salty Balls I just think I may have been disappointed had I tried to eat just a bowl of this for a quick meal.

dinnerMr. Guava and I just got some great cookbooks in Hawaii so we’re thinking of throwing some sort of Aloha themed party (Fourth of July on the North Shore?) and I can’t help but think these balls in a sweet and sour type sauce… mango something or other would be delicious!  Any fave sauces out there to top my Salty Balls (gah… that’s enough endorphins for you today dear reader).

WIP Wednesday: Mama Needs a New Pair of Shoes

wipbannerOkay so I’m not actually interning with a cobbler at the moment… hahaha… err.. I wouldn’t put it past me though… sounds like an insanely expensive time consuming hobby that I know nothing about but would try to take up.  It’s just that, well, the only other title I could come up with for today was “Crochetin’ Awayin’” and lets be honest with ourselves.. if that was the blog title that popped up in your Google Readers well then we probably wouldn’t be having this time wasting blog conversation would we? (-_- hehe… victory…) However, it does actually hold resonance with my little craft theme of the moment as I just put down some big ones on this little beauty…

sewing machingWoot Woot!  Yeah, I had a sewing machine bite the dust last year and then proceeded to pilfer the unused one at my parents house.  Unfortunately, just this week while trying to sew my Orla Kiely Throw (and when I say throw I mean tablecloth sewn on top of a fleece blanket)– Kaput!  Boo!  I swear I’m not a sewing machine breaking maniac… just a rough ticket I guess… or it’s a conspiracy by big business to keep down the DIY revolution and my craft empire (we also lost a couple of laptops in the last five years…)… hmm… conspiracy?!  Highly probable… but I digress…

So, anyways, how my title fits in is that I’ve decided that instead of looking into my closet and feeling all sad and poopy at my lack of springy summer items I’m going to up-cycle, up-cycle, up-cycle!  If I’m going to talk the talk I need to walk the walk!  I used to make/re-make items all the time in H.S. and college and I really want to get back into it so I don’t feel like I’m being blanded down by the world.  Plus, I think staring at all the neutral colors/items in my closet is sucking my creative juices dry and I’ll be more motivated if I start off working on items that provide instant/constant gratification (i.e. look down from work computer at kick-ass diy blouse and smile).  Also, as I’m now an old married “workin’ for the man lady”, this will be a good challenge for me to hone my crafty skills for cleaner more finished looking pieces (although nothing will ever take the place of a good old fashion stickin’ it to the man tee cut up and safety pinned back together!)!

Now for some crafts… haha… did you think that little manifesto was ever going to end???  I’ve started working towards my new goals by pushing my crocheting skills past scarves and hat to other clothing items…

myboleroI have no idea yet whether this is going to actually fit me or if I was over-confident and am making a sweater for my imaginary half my size pixie friend… we shall see.  Also, while I really like how it’s coming along I didn’t really understand the whole “stitching around the post” (any tips?) thing so I think mine looks slightly different than it’s supposed to… oh well… one of a kind friends… one of a kind.

Heehe… anyways that’s all for now.  Sorry, Vegan Foodie bloggers I hope you’re not getting too tired of my crafting and food pictures sans recipes.  Actually, the Hawaiian cuisine really jumpstarted our cooking creations and din dins have been uber yummy but for some reason I just haven’t been feeling the picture taking and recipe regurgitating…  I shall try to traipse into my kitchen with my camera soon enough!  Happy Wednesday!

Vegan Tour of Oahu Part 2

Hello Friends!

Can you handle just a little more Island Goodness???  Well, if you’re too full just take a nap come back and read this later… heheee… because I would be amiss not to mention Down to Earth Hawaii’s only ALL VEGETARIAN organic and natural food store.

IMG_0270When these stores popped up on Mr. Guava’s IPhone we knew we had to go check it out but tried not to get our hopes up (how many of you have had that experience trying to grab lunch at Whole Foods… walk up to counter… look at items… great I can eat one kind of Olive… bah).  So we rolled in one day ravenous after a morning of snorkeling at Hanauma Bay

IMG_0268I had given up all hope of ever having a Manapua ever again and immediately took a picture to send to my dad.  Unfortunately, these weren’t the greatest show of a vegan subsitute but the shock of seeing the words Vegan & Manapua next to each other was kind of a prize in itself.  We ventured further in towards the smell of the deli and [lights stream down through the clouds and heavenly music plays] a buffet line with over half the items being VEGAN!!!

downtoeaerthThis is what happens to Vegans who seldom get to indulge in the gluttony of a buffet style meal… you end up losing all self control and stand at the counter to pay embarrassed as your plate inches up over the one pound mark.  There were several curries, at least 3 rice options, quinoa salad, potato mac, korean style bbq tofu, roasted potatoes.. not to mention the rest of the salad bar (when there’s curry who has room for salad) with Vegan Salad Dressings!  On top of this all but 1-2 dishes were local!  And wait what was upstairs in the seating area to accompany our meal…

noochWow!  If that doesn’t win you over (as full as we were… read: death by curry overload) we made room to grab a VEGAN Mocha Chip Shake for dessert!  There was actually a whole list of VEGAN shakes!  Are you reading this a whole list!  Now as much as just the lunch foods would have won me over completely Mr. Guava and I couldn’t help pilfering around the rest of the store…

IMG_0260IMG_0263IMG_0266As Mr. Guava and I contemplated the insanity level of trying to fly with 30 lbs of vegetarian dog food and buying a special cooler to help transport a months supply of frozen foods back home (Fu Scramble!!  In a HOT POCKET?!! LOVE IT!) I was completely smitten.  Could I survive in Oahu on a checkout clerks budget???  I might just have to find out…

Whew… are you stuffed?? I am.  Oahu you’re okay in my Vegan book.  And Down to Earth Grocer… you’ll always have a place in my heart… and digestive tract!

Vegan Tour of Oahu Part 1

Aww… how sweet are you guys???  You’re making me blush… stop stop… (Guava waves hands to entice reader to leave warm fuzzies)… no seriously I don’t deserve it (Guava continues to encourage the love)…heheehe… no but really you guys are awesome!  It really does tickle Guava pink that you all loved everything!  Again, let me reiterate how I wish all my Vegan buddies could have been there for the Vegan Fiesta Buffet and line dancing!  And compliments from the Snarkster???  If you guys want to see a Vegan that’s getting it done check out Snarky’s Off the Grid Plans!  Yowza!

As for VegNews Wedding Issue fame (visions of grandeur dance in Guava’s head) how fun would that be??  I’m not much of an enter-er but seriously Tio’s deserves it’s due!  And a Wedding Comic Book Contest eh???  I do have some extras but seriously… there’s nothin’ in there that ya’ll haven’t seen… just the basics… but I do like to send things in the mail… well if ya’ll would really like one let me know and I’ll think of something fun!

Enough of this already Guava… your head’s not going to be able to fit through the metaphorical blogging door soon we just want to see some nummers!

Okay well here’s how some of our food adventures went down on the island… I’ll do restaurants today and leave my new favorite place ever for tomorrow!

First, off Hawaiian Foods that are naturally vegan…

shave iceHaha… okay there are probably a few other things but still we were lucky to find Green Papaya Vegetarian Restaurants while staying in Waikiki…

green papayaAmong other deliciousness (Spicy Fried Rice, Saimin, Spring Rolls, Chow Mein) we had Vegetarian Pho! Woot Woot!  Now I discovered Pho just shortly before I went vegetarian so going out to Vietnamese with friends really has been torturous!  This taste has really inspired Mr. Guava and I to branch out and try some new dishes at home because life really isn’t life without some spicy, cilantroey, basily Pho every now and then!

veggie phoAfter spending a few days doing the tourist thing down south we headed up to the North Shore…

northshoreHahaha… sorry couldn’t resist… a cult classic?  Okay, maybe only in my family.  As a sidenote check out the new look of Yeah, That Vegan Shit… having ancestor’s from the Land of Spam I can’t help but love this!  Okay back to the foods on the North Shore.  It’s a lot more country up there but after finding Haleiwa Eats Thai this is really all Mr. Guava and I wanted to eat… ever… this place was awesome both in ambience & food and they were more than happy to accomodate our Vegan-ness… first off Spicy Kee Mao Noodles…

pinang curryAnd our last meal there we threw conventional meal ordering to the wind and got an appetizer sampler of all of Haleiwa Eats Greatest Hits.  I would seriously live off these three dishes if I could!  There’s the staple: Vegetarian Springs Rolls, then theres the innovative Fried Tofu Salad w/ Peanut Lime dressing (will definitely be attempting this), and last but not least (wouldn’t even know where to start in an attempt at this) Crispy Thai Noodles… a house specialty!

appetizersOf course we finished off several of our meals with Mango Sticky Rice.  Now I’ve had my share of sticky rice but the Coconut Sauce that they put on top was ridiculous… thick and salty and sweet all at once… mmmm…

sticky riceWe of course hit up the world famous Matsumoto’s Shave Ice (always a line out onto the street!)  just a few doors down from Haleiwa Eats which… if you think shave ice and snow cones are synonomous please make it a life goal to get here at least once!  Of course I missed the condensed milk topping and soft serve on the bottom (something I’ll have to figure out… maybe bring a carton of rice dream along with me next time) but still there really is something different about Matsumoto’s.  And you can still get a small shave ice (really more ice and syrup than anyone should eat) for under $2!  Mr. Guava and I were like… okay as tourists used to getting a $5 coffee in the morning we’d totally pay more… then as we walked out with $60 worth of shirts and other Omiyage (souvenirs) we were like oh right…

matsumotosFinally, I can’t fail to mention Breakers Cafe.  No culinary one of a kind masterpieces here but guess what we got for BREAKFAST???

This wasn’t like we rolled out of bed at noon from our honeymooning slumber and had fried rice for breakfast… it was on the breakfast menu!!!  Remember when I was advocating Fried Rice for Breakfast and you all sat in front of your computers silently typelessly judging me??  This stuff really hit the spot before a day of sight seeing all sticky and soy sauce-y… not the dry Chinese Fried Rice… real down home Breakfast Fried Rice!  MMm… only in Hawaii…

So clearly we didn’t starve… haha… here I was thinking I was going to go on a fruit fast.. oh well I may be rounder but I’m also browner!

WIP Wednesday: Wedding Wrap-Up

wipbannerHullo Friends!  So I’m totally going to cheat here and show some pics of some past Works in Progress for my WIP Wednesday… poor Shellyfish… you’d think us bloggers could obey some simple rules… hehee.. creative minds beat to their own drums!  Anywho, as I stepped off the symbolic blogging curb before the wedding and wasn’t around to show ya’ll what was keeping me busy I thought it only fair that I do a little wedding crafts post (Plus, I thought I better get some pictures out before Treehugger jumps on a plane and heads over to get them herself… hey that wouldn’t be so bad…. I’ll show you ALL the pictures if you come eat Vegan food w/me here in the states… [batts eyelashes...])

cactusOur name holders were those succulents & cactus that I showed you all earlier (they look less phallic spread out right?) in decopauged food cans (mostly beans… we eat a lot of beans….).  On it we had a little message about lawn watering wastefulness, landscaping with plants appropriate to your region, and a little propaganda for “Foods not Lawns!”  Underneath is the Wedding Cookbook I’ve been going on about… which actually turned into a Wedding Comic Book… entitled “Veganomics 101: Evil Plan to Save the World One Sustainable Vegan Taco Stand Wedding at a Time.”  It included some info on why we’re Vegan, easy sustainability tips, DIY projects and simple Vegan Recipes… most of which all you Guava Lovers would find suspiciously familiar.

Here’s a pic of our cupcake cake they were Coconut Lime and Mexican Hot Chocolate… all Vegan… and all Organic!  An amazing friend helped us sticker and decorate before the wedding… you can’t really tell in this picture but my cupcakes actually had a whole beer bottled edifice of their own!

cupcakesAnd a close up of what we used for the cutting and our topper!  The topper was hand made out of tin and looked nearly identical to Tio’s Beer Bottled Chapel!  It was actually a candle sconce and was all gorgeous and glowy!

topperAnd even though this wasn’t work that we did I thought all you food pornographers wouldn’t mind some pics of the amazing fruit spread that Tio’s set out for us… all the fruit was done by hand by the artist himself, Martin Sanchez, and his daughter carved the ice sculpture!

birdsfishstrawberrieswatermelonice sculpturesNot to worry Vegans… I did you proud and didn’t just serve fruit as a show of the vegan diet… there was plenty of other good stuff but I don’t have the pictures right now.  I’ll definitely show you when I have them!

I’m back to my Dino-tastic Ways…

Hello World!!!

Guava is back… mentally, physically, and emotionally… haha…

Where have I been?  Pretty much on a bi-polar roller coaster!  Haha… sorry to drop of the face of the blogosphere but I had a lot going on.  After one of the busiest winters of my life with directing monologues and Mr. Guava in his last year of Physical Therapy school my grandfather passed away a couple weeks before my wedding which was as rough and wonderful as any time can be under those circumstances and then I was straight off to Oahu for the Honeymoon!

It was trying but amazing to see how many wonderful people there were around me that truly love and support me.  They know who they are and to all of them I am eternally grateful!

No need to fret or fuss Guava Lovers!  I’ve missed you all and am truly feeling more peaceful, calm, and itching to start the Craft Empire than ever!  Not to mention that I have some major PIF’ing still left to do… ahemahem… I know you think I’ve forgotten about you but I absolutely haven’t!  I’ll have to check in with Towanda to see how our collaborative PIF shoe project is coming.

So with that said… and in celebration of my first post back after a long sabbatical I give you some Dino-tastic Vegan Treats…

photoSure I have pics from my Vegan Tour of Oahu (which I shall bombard you with to stall as I get back into cooking) but Honeymoon and Wedding Pics are too boring for a first post back!  Aren’t these amazing???  They are Mini Crustless Tofu Quiches from the Fat Free Vegan Kitchen… in the shape of Dinosaurs courtesy of a dinosaur muffin tin from this crafty lady!  And get this I actually followed the recipe!  Okay I added zucchini and put my herbs in the tofu mix instead of with the sauteed veggies… and added some green dye so my dinosaurs would be green but…  other than that… pretty close!!! Heheehee…
