So I realize risotto is probably one of the lowest grains on the nutritional totem pole but damn it’s delicious… and I got a box for $0.63… which again is… especially after I creamed the crap out of it… it’s nutritional worthiness.. all in all… a good deal.
Magic Cauliflower Cloud Risotto
Saute up some onions and garlic (a good start to any dish… really if I don’t write this step into a recipe just assume I forgot…) in olive oil.
Realize you have the end of a Cauliflower crown (a good third) sitting sad and rejected in the fridge from the Farmer’s Market when his brother, Broccoli, has been long since consumed. Decide that you’re going to make a luscious, creamy, cloudy concoction so that Broccoli can no longer tease Cauliflower about it’s lack of versatility. Cauliflower will ask you for a tad of Garlic Salt and a healthy sprinkle of Lemon Pepper. Concede.
Toss in risotto (I think I did about a cup?) for just a few seconds to give it some of the good veggie/olive oil juices and right before you add liquid toss in a handful of sliced mushrooms (I used the cheapy whites from the market but my fungi foraging inspiration Kimmy Kokonut has me thinking about trying to grow my own… light broths with tender Enokitakes and giant Portobello steaks are already dancing in my head) .
Add liquid to about 1/2 an inch above risotto and veggies… I did 1 part soy creamer to 2 parts broth with a splash of white wine. Keep an eye on it… I’ve never gotten exact measurements… I added some water at the end because once my liquid boiled off my risotto was still a tad to al dente. You can do more soy creamer and broth but.. Oy Vey… that stuffs pretty rich already.
Serve warm and enjoy… preferably with some vino!
Also, 10 points to anyone who got my “Magic” Risotto Gilmore Girls reference… I’d actually do a contest if I thought this game wasn’t already suspiciously skewed to River Phoenix’s benefit.
