So my Indian food, and I use the term Indian food loosely, has never been my strong suit. I’ve never been fortunate enough to live/cook with anyone that really knows what they’re doing in this regard (one summer with a friend in college but I didn’t really pay attention I just reaped the benefits) so I have vague ideas about what everything should taste like confused with early memories of Japanese curry. I’ve tried my hand at a couple recipes, including once in my pre-veggie days when I went wondering around an Albertson’s asking produce staff for Chickpeas, with a can of Garbanzos already sitting in my cart. So often times I salivate over all the spicy deliciousness I see floating about the internet but am to intimidated to try my hand at any of them. However, last night, after of a weekend of being shut in from the smoke and exhausted from trying to get my parents to just pack everything up and get out of Brea I decided caution be damned! I want Spicy Coconut Curry and I want it now! Here’ what I got…
Chop up half an onion & a few cloves of garlic.
Throw in some sliced potatoes & half a can of garbanzo beans.
Splash with some olive oil and sprinkle with garlic salt, pepper, chili pepper flakes, cayenne pepper, cumin and I threw in some pre-mixed curry powder spice. I also have to admit that I didn’t have any tomato paste so I squirted in some ketchup… a little sweeter so go easy but it does the trick.
I let everything simmer until the onions and potatoes were translucent. Before everything got too soft I threw in equal parts coconut milk and veggie broth and sprinkled in a generous handful of frozen peas and let everything cook down to thick creamy goodness.
All in all I was pretty satisfied. We served it over some rice and it was quick, thick, creamy and just spicy enough to have you reaching for your water glass (okay wine glass) but not so spicy that your eyes are bulging and sweats pouring off your forehead. Made enough for two light dinners, two lunches, and one crap I don’t have anything to eat meals.
It’s going to be a long week as I’ve accepted a director spot for Vagina Monologues this year and auditions/casting are this week. Which let’s see… get to work at 7:30… auditions 6-10ish… casting 10-???… puts me at let’s see 17-18 hour days if all goes quickly??? I’m exhausted just writing down my schedule but this will be the third time I’ve had the opportunity to be part of the V-day movement and every time has been amazing. If you have any community productions going on near you I say get involved! Your Guava will thank you for it and you’ll be doing good for Guava’s everywhere! Yep, I might need to try my hand at some other spicy dishes to keep my heart going… I’ve had this one from Diet, Dessert and Dogs in my “to make” list for awhile now. So… wish me luck… and I’ll try to keep some posts going this week… or at least some of Mr. Guava’s concoctions!
