Pre-Thanksgiving Soiree

So what to do about Thanksgiving when the family either thinks it’s okay to serve you soup from which you’ve just seen chunks of dead animal flesh removed or that uncooked wild rice in a nearly raw “baked” bell pepper are sufficient sustenance. Well, Mr. Guava and I did some pre-Thanksgiving soiree testers to well… test the waters…

Spaghetti Squash

(my first try and I’m now completely smitten with it!)

Simply cooked. I just chopped that sucker in half gutted the inside for seeds (roasted & yummy) put in some minced garlic, pepper, and a dollop of butter (earth balance will be substituted) and rolled it in foil with a little opening in the top. I set it to bake for probably around 45 minutes at 375. Perfectomundo! When it came out I spent some time standing by the oven twirling my fork in it and marveling at it’s spaghetti like texture and garlicky decadence (I highly recommend this step). Then when it cooled I scraped it out and set it aside. It comes out so clean and close to skin that I think I might use these for mini bakes or shepherd’s pies or something. I think this will make transportation and re-warming easy.

Stuffing

hehee… out of a box… but for actual Thanksgiving I think I’m going to try veganizing this little doozy from my fleeting veggie days… Savory Bread Pudding seriously amazing melt in your mouth stuffing!! Also, I’m toying with the idea of twice baked stuffing that I make into little biscuit/balls.

And last but certainly not least…

pict2342Cinnamon Sugar Sweet Potatoes & Green Apples

So both Mr. Guava and I have never been mix the sweetness into dinner type of people we’re savory all the way but we thought that maybe we should re-visit some festive foods that we tried once in childhood and steered clear there after.  We sliced up some sweet potatoes…[insert confusing conversation where I question Mr. Guava about apples in the stuffing thinking that this sounded vaguely familiar and demand that he should lend his caucasian expertise to weigh in on the subject... Mr. Guava thinks I'm talking about the sweet potatoes... and then we both think hey that might be delicious and we'll still have something tasty if the sweet potatoes fail].. sliced up some green apples… added in a couple of dollops of butter (again with the Earth Balance) and sprinkled with cinnamon and brown sugar. Baked in tin foil at 375 for I think around 30 minutes.

Not bad all in all for a “What are we going to eat for dinner?” night and a good jumping off point for the big day. I’ve also been offered a turkey mold… and who knows what kinds of delicious trouble I can get into with that?!
