Vegan Versus Wild… or Death of the Weekend Warriors…

You know those people…

…the people that hurt themselves because they do little more than get up from the couch to re-fill the chip bowl during the Sunday football game as their regular form of physical activity… then proceed to tear, pull, or otherwise break something because they get a whim to go a out and, “shoot some hoops,” but end up getting involved in a 2-day round robin pick-up tournament that has them hitting the asphalt for 2 stints of 5 hours straight…

..yeah…

Upon, our last hiking adventure Mr. Guava & I sheepishly realized.. err… “That’s US!” Somehow, we always end up doing this… seriously, we’ve been barricaded inside our house/coffeeshop/library with flus, and work, and studying, for the last couple months and then decided that’s it… we’re making time to get out for some physical activity!!! Something easy and relaxing…

Okay, in our defense we picked an easy little 3 mile hike… we figured we’d go do the hike then grab some breakfast and hit the books… high off adrenaline instead of caffeine…

the long road homeUnfortunately, there was this where do park?  Where does the trail start? Will the Kia make it over this gravel? The trail can’t be too much further from here? Issue… that ended with us doing like an 8-9 mile hike (we lost track as we began to get dizzy and weak)… which ended with this long walk down a dirt road in the sun (now midday) with Scooter having to ride in our camel pack and us not sure if we were going have to send up some flairs for help…

Needless to say we were pretty much recovering the rest of the weekend… still an adventure… and much needed physical activity… although probably much safer in smaller doses…and much more fun if Bear Grylls was narrating for us in that ruggedly sexy British accent… except of course without all the scary not very vegan animal eating…

Vegan MoFo Day #Crash & Burn…

Heheee… so clearly Vegan MoFo was an EPIC FAIL for me this year… gah…. barely got halfway!!!!  That cold seriously knocked me out on my little Vegan butt and between starting a new job and thinking I could continue to work nearly full time with a side of graduate school… well.. you can see how falling off the metaphorical blogging wagon happened.

Anyways, just poop… I mean popping in (haha… “pooped out” freudian slip!)… to say I’m still ALIVE!! Woot Woot!  And have just been spending what precious time I have with this guy…

I will be blogging occasionally (hopefully Tu/Th) but I figure if I don’t commit I won’t have to apologize and a little post here and there will be a happy surprise!  Heehee… on the upside… while tired… I think I am finally getting a hold of my schedule and the Guava Kitchen has been filled with more and more homemade goodness each week!  Lots of canned and frozen veggies but still… better than the constant takeout… also look forward to a few more restaurant finds and dadadadun… a VEGAN COWORKER!!! Unfortunately, said Vegan Co-Worker is leaving at the end of the month BUT there will be farewell VEGAN CUPCAKES!!!

Vegan MoFo Day#11: Spicy Bean Soup

Vegan MoFo Day#9: Manicelloni

MoFoBannerSo I know ya’ll were really excited about the fore mentioned “Instant Noodle” Post… and don’t you worry… it’s a-coming… but as Mr. Guava and I had a date night last night (cooking included) I decided to break the monotony of mediocrity that has unfortunately become standard fare here at For the Love of Guava for some delicious homemade, real time, goodness…

Nut Cheeze Manicelloni

Manicelloni eh?  Yeah, well, (a) it seems that making up names is sort of my theme for Vegan MoFo 3 and (b) Manicelloni makes me giggle because it sounds like some sort of man parts and (c) I didn’t really know the difference between manicotti and cannelloni until just this second.

Oh Wikipedia… you really are the Wise Sage of our day.

Anyhow, this dish was inspired by La Dolce Vegan’s Portabello Cannelloni… but we couldn’t find Cannelloni (or know the difference)… so we bought manicotti… and that was the last time I actually looked at the recipe… and tadaa… MANICELLONI!!!

Yes, I admit it we did have some of this while cooking but I think it had to have worn off by now…

moselAnyhow we stuffed our Manicotti with sauteed onions, garlic, mushrooms, and potatoes (which I nuked in the micro… classy!).

For the Sauce:

**Before I started the sauce I threw a handle of chopped mushrooms, gooseberry tomatoes from our garden and most of a can of Artichoke Hearts into the oven with garlic salt, pepper and olive oil to roast at 45oF.**

I used maybe 3/4 cup of soaked sunflower seeds & 3/4 cup of soaked cashews

1 loose cup of basil leaves

3 Cloves of Garlic

Squirt of Dijon

Liberal Dash of Soy Sauce

Liberal Drizzle of Olive Oil

Liquid from 1 can of Artichoke Hearts plus a 1/4 Cup more of water from the can

4-5 Artichoke Hearts

Salt, Pepper, & Nooch to taste

Blended this up and put it on the stove to heat.  Once it was on the stove I added maybe 1/2-3/4 cup of plain soymilk and a sprinkle of cornstarch to thicken it up.  Throw in the roasted veggies and heat through adding milk, cornstarch, or olive oil as needed.

MMM… my picture really doesn’t do it justice… pasta stuffed with potatoes and covered in a creamy nut pesto?!  AMAZING!!!  Gah… why am I going to school when I could be a housewife and be cooking/eating like this every night????

Vegan MoFo Day#8: Vegan Sushi Bar

Man… getting chilly around these parts… I’m in that place where I’m ready for the Fall weather and the Fall food but am still sort of disoriented when I go outside at 6pm and it’s dark… ready to forego the heat for my favorite winter coats and scarves but not quite ready to stop eating outside…

Vegan MoFo Day #7: Roscoe’s Chicken & Waffles

MoFoBanner**OUCH!!** Hey stop… **Oomph**… Listen a second **DUCKS**… did you seriously just throw a can of nutritional yeast at me because… honestly… that’s pretty violent for  a vegan!!!

Guys… FRIENDS… calm down a second… I realize it may be blasphemous to mention CHICKEN next to VEGAN MOFO but fear not!! Even with all the moaning and complaining from friends and family and disgruntled waitresses running back to the kitchen with their fiftieth  dairy question for the their cooks the Guava’s and this hear Guava Loving Blog is still VEGAN!!!

Sheesh… excitable bunch on a Monday morning huh… anyhow what I’m getting at is a brunch idea reminiscent of Roscoe’s Chicken and Waffles!  I thought my inspiration was worth the mention since as much as I can appreciate Roscoe’s historical and cultural value it’s probably not becoming the most veg-friendly place anytime soon!  For the Love of Guava proudly presents…

Vegan MoFo Day #6: Precocious Polenta

MoFoBannerAs we head into Fall… that mysterious dusk of the seasons…. where brisk morning air can freeze our frontal lobes and the afternoon sun can beg us to return late from  lunch for just a few more minutes of rejuvenating Vitamin D… what is it that can both warm and cool the soul at the same time???

Precocious Polenta I say!!! Wait… Guava… is this another one of those “Pizzaette” things… where you think if you’re really long winded and obnoxiously over-zealous you can trick us into thinking you’re making something way more complicated than you actually are???

Okay, kinda… but here’s the thing… I really do think this is the perfect mix for the season…. warm and filling but not an overload of the starchy holiday potato goodness to come… vaguely reminiscent of a summer Margarita…. huh huh???

Whatev… I’m telling you about my polenta anyway chumps..

Precocious Polenta

beans&polenta Saute up some garlic, onions, and corn then mix up cornmeal according to package directions for a thick version of polenta.  Scoop out onto a greased cookie sheet and pop in freezer for 15 if everything else is ready or the fridge for 25-30 if you’re working on the rest of your precocious action.  Mix up your guacamole and saute up your black beans!

Once your polenta has set cut into triangular slices and fry in olive oil until golden and crispy on the outside.  Serve hot!

MMm… or the briefer version is… remember that you have leftover polenta cakes in the fridge… defrost… and jump straight to the frying… heheehe…

Vegan MoFo Day#5: An Ode to the Oreo

Eww… no friends this is a totally blog appropriate Vegan MoFo Confession…

So, not that my posts have been extremely stellar or anything but some of the meals you’re seeing (and will see this month) aren’t very recent!  I’ve been taking pics whilst I’ve been away so I had some leftovers stored up!  Eeks… I’m all about the MoFo spirit it’s just well… this little Vegan MoFo hasn’t been in her kitchen much lately… in fact you know how I’ve been moaning and groaning about my schedule well this has been a huge part of my veganism lately…

goldenoreopackageI make this confession on two counts… (A) Golden Oreos are FANTASTIC… and like their chocolatey counterparts completely processed with lots of bad stuff but also VEGAN…. and (B) Because I was talking to the ever lovely Towanda the other day who in her ever supportive way told me, “Well, at least you’re taking care of yourself with all that good vegan cooking!”

Except, eck… I’m NOT!  I totally feel like I’m decomposing from the inside with all the crap I’ve been shoveling down my mouth and washing down with more caffeine than any normal person should have!  I’ve completely become a French Fry Vegan (Exactly what it sounds like!).   And while I don’t want to beat myself up over it I’m reminded by the lovely and eloquent Maya that it’s all about personal balance… each of us doing what we can and taking care of ourselves.  That said… I have to make more time or find a way to give myself proper fuel… and with so many wonderful ideas at my disposal I really have no excuse for my diet to be composed purely of Golden Oreos and French Fries. It might mean  I cook small things, ready snackfoods, buy out/ pre-made more than usual but my little Vegan Body can’t run on zilch and I shall stop expecting it to!

Vegan MoFo Day#4: Manapuas

MoFoBannerGood Morning Friends!! How does everyone feel?  Stuffed full of Vegan Goodness???  Man… gotta love Vegan MoFo huh… I haven’t surfed around nearly enough and… damn… not having time to make a 3-course meal every night is totally bumming me out!  So much good food!  So many awesome blogs!  So little time!  **Head Explodes**

Nay friends… Guava is turning over a new leaf… it’s all about the here and now and the here and now can’t be rushed… I might not have a whole lot of control over my schedule but the pieces I do have I will learn to SAVOR…

**SIGH** What??? Oh sorry… Vegan Tour of Oahu flashback…. ahhh yes I remember the feeling… the, “I couldn’t be stressed if I tried!”  Mmm… well in honor of my Hawaiian Cultural Roots (and ahem… cultural presentation I had to do for class) I give you an Aloha Favorite….

Vegan Manapuas!

manapuasWhat are manapuas you ask?  These are a local favorite but usually, as it’s name suggests, is filled with barbecue flavored pork (eck)!  So not vegan but totally veganizable!  However, I thought, if I do this I have to do it right… not like that disappointing version I had in Oahu.

Step 1: Find a Bun Recipe

WOOT!! WOOT!! Totally already VEGAN!

Step 2: Find a Filling

golden curryHas anyone had Japanese curry?  It’s so different… kind of stewy… my parents are always really confused when I say I’m making curry then bring home something mustard colored.  Since I was making a whole mess of steamed buns I thought I’d take it easy on myself and get a curry mix for the filling… mm… brown gravyish… msg goodness friends…

All I did was some garlic, onions and potatoes… sauteed until nearly done and threw in chopped mushrooms and half a bag of frozen peas (wish I had added carrots and less potatoes… too starchy in the bun) and then I added water and that scary gelatinous (no actual gelatin contained) cube!

Followed the bun recipe for stuffing and steaming and WALAHH…

VEGAN MANAPUAS!!!

They were a big hit for class (although when you have a class from 5-9pm it’s probably not the most critical culinary audience) and Mr. Guava and I have been whittling away at the leftovers as snacks this week.  I have big plans for these… stuffed with Soyrizo… filled with sweet potatoes and stuffing for thanksgiving…. nomnom nom … really can’t go wrong when you stuff balls of dough with good stuff… we already used the leftover dough to make little individual peach cobbler/tart thingies (that’s the technical term)…

Flatten Manapua dough into muffin tin…
